Quinoa, Chick Pea and Parsley salad

Here is a great summer salad that can be a filling lunch or a fantastic side salad. And men, take note – this is a salad you can really enjoy and not feel hungry afterwards!

Quinoa, Chick Pea and Parsley Salad

  1. 1/2 cup Quinoa (cooked = 1 cup)
  2. 1 can Chick Peas (drained and rinsed)
  3. 3 Spring Onions chopped
  4. 2 Stalks of Celery chopped
  5. 1/2 bunch Flat Leaf Parsley chopped
  6. 1/4 cup currants
  7. Pinch of Sumac
  8. Pinch of Cinnamon
  9. Squeeze of Lemon Juice
  10. Drizzle of Olive Oil
  11. Salt and Pepper to taste

Instructions

  1. Cook the Quinoa in 1 cup of water using absorption method for 12 minutes, rest for 10 minutes.
  2. While it is still warm, add to chopped Spring Onion and mix.
  3. When cooled, add all other ingredients.
  4. Serve.
